Ingredients

  • 1 garlic clove
  • small to medium avocados or 1 large ripe avocado
  • ¾ cup fresh basil leaves tightly packed
  • ¼ cup fresh dill
  • ¼ cup fresh parsley tightly packed
  • 1 –2 scallions both light and dark green parts, roughly chopped (about 3 tablespoons)
  • 1 teaspoon fine sea salt
  • Juice of 1 medium lemon approximately 3–4 tablespoons
  • 2 tablespoons apple cider vinegar
  • cup cold water
  • ¼ cup extra virgin olive oil

Instructions

  • Add the avocado, garlic, basil, parsley, dill, scallions, salt, lemon juice, apple cider vinegar, and water to a high-speed blender or food processor. Blend on high until the mixture becomes creamy and smooth, with the herbs finely incorporated and the avocado fully puréed.
  • Pause to scrape down the sides of the blender or processor using a spatula to ensure all ingredients are evenly mixed. Resume blending, and with the machine running, slowly stream in the olive oil until the dressing emulsifies into a luscious, silky consistency.
