Ingredients

  • 6 tablespoons of butter melted
  • 1 cup of sour cream
  • 10.5 oz of cream of chicken soup
  • ½ teaspoon of onion powder
  • ¼ teaspoon of garlic powder
  • ¼ teaspoon of salt or adjust to taste
  • teaspoon of pepper or adjust to taste
  • 1 sleeve of Ritz crackers finely crushed
  • 1 Rotisserie chicken

Instructions

  • Begin by dismantling the Rotisserie chicken: remove the skin and bones, then shred the meat into small, bite-sized pieces. Place the shredded chicken in a separate bowl.
  • Preheat your oven to 350 degrees Fahrenheit. While the oven heats, lightly grease a 2-quart casserole dish with nonstick cooking spray and set it aside.
  • In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, onion powder, garlic powder, salt, and pepper. Stir these ingredients together until they are thoroughly mixed.
  • Transfer the chicken mixture to the prepared casserole dish, spreading it evenly across the bottom.
  • Sprinkle the crushed Ritz crackers evenly over the top of the chicken mixture, then drizzle the melted butter over the crackers to moisten them.
  • Place the casserole dish in the preheated oven. Bake for 20-30 minutes or until the topping is golden brown and the casserole is bubbling around the edges.
  • Remove the casserole from the oven. Allow it to cool slightly before serving to allow the flavors to meld beautifully.
