Ingredients

  • 4 cups ice
  • 1/2 cup frozen pineapple chunks refer to How to Cut a Pineapple
  • 6 ounces white rum
  • 6 ounces pineapple juice
  • 6 ounces cream of coconut preferably Coco Lopez brand
  • 4 ounces golden or añejo rum optional but highly recommended
  • Pineapple leaves or wedges for garnish optional

Instructions

  • Combine the ice, frozen pineapple chunks, white rum, pineapple juice, and cream of coconut in a blender. Blend the mixture until it reaches a smooth, consistent texture.
  • Pour the blended mixture into glasses. If desired, gently pour the golden rum over the top so that it floats.
  • Garnish with pineapple leaves or wedges for a decorative touch and serve immediately.

Notes

While the classic blended piña colada recipe typically doesn't include frozen pineapple, I believe it enhances the flavor and cuts down on the ice required. Like many tiki-style beverages, this recipe incorporates various types of rum to create a harmonious and flavorful drink.
