Ingredients

  • 4 large thick slices country bread
  • 3/4 cup ricotta cheese
  • 2 nectarines sliced
  • 1 Tbsp. very coarsely cracked black pepper
  • 4 tsp. honey
  • 4 Tbsp. white wine vinegar
  • 1/2 cup extra virgin olive oil

Instructions

  • Begin by preparing the marinade. In a medium bowl, whisk together the white wine vinegar and honey until the honey is fully dissolved and the mixture is smooth. Add the sliced nectarines to the bowl and toss gently to coat. Allow the fruit to marinate for 10 minutes, giving it time to soak up the sweet and tangy flavor.
  • After the nectarines have marinated, drizzle in the extra virgin olive oil and sprinkle over the cracked black pepper. Toss again to evenly coat the slices with the peppery vinaigrette, letting the fruit take on a glossy finish.
  • Meanwhile, grill or toast the slices of country bread until crisp and golden on the outside, yet still soft within. Spread a generous layer of ricotta cheese over each piece of warm toast.
  • To serve, spoon the marinated nectarines and their juices over the ricotta-topped bread. Make sure each slice receives a balance of fruit and dressing for a bright, juicy bite every time. Serve immediately while the bread is still slightly warm.
