Ingredients

  • pounds beef tail stew
  • 1 pound luau taro leaves
  • 1 teaspoon Better Than Bouillon Beef Base
  • 4 slices fresh ginger
  • 1 cup water
  • Hawaiian salt to taste

Instructions

  • Begin by setting your Instant Pot to sauté mode. While it heats, prepare the luau leaves by trimming away any tough stems and thick central veins. Rinse the leaves thoroughly under cold water to remove any grit. Roll them tightly and slice into thin ribbons.
  • Add the beef tail pieces to the Instant Pot along with the sliced ginger. Sprinkle in Hawaiian salt to your preference, followed by the beef base and water. Gently layer the prepared luau leaves over the meat mixture.
  • Secure the lid on the Instant Pot and switch the valve to the sealing position. Cancel sauté mode, then select manual high pressure and set the timer for 25 minutes. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes before carefully performing a quick release to vent any remaining pressure.
  • Serve hot for a traditional, comforting Hawaiian stew with tender greens and rich, savory beef.
