Ingredients

  • 1/2 cup 112 grams milk (dairy or non-dairy; homemade unsweetened cashew milk works well)
  • 2 tablespoons pumpkin puree not pumpkin pie filling
  • 1 tablespoon maple syrup or adjust to taste
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon pumpkin pie spice
  • Whipped cream or whipped coconut cream optional, for topping

Instructions

  • In the pitcher of a blender, combine the pumpkin puree, milk, chilled coffee, maple syrup, vanilla extract, and pumpkin pie spice. For a creamy, frothy consistency, blend the mixture thoroughly for about 30 seconds.
  • Taste the mixture and adjust the sweetness if needed. Blend briefly once more to incorporate any adjustments.
  • Fill a glass with ice, then pour the blended mixture over the ice. For an extra touch of indulgence, top with whipped cream or whipped coconut cream if desired. Add a sprinkle of pumpkin pie spice over the whipped cream for a decorative and flavorful finish.

Notes

I initially tested this recipe with one tablespoon of pumpkin puree, but the pumpkin flavor was too subtle, with the spice and maple dominating. Increasing the pumpkin puree to two tablespoons not only made the drink thicker but also brought out a more noticeable pumpkin flavor. Feel free to adjust the amount of pumpkin puree to suit your taste!
