Preheat your oven to 375°F (190°C). Arrange as many baguette slices as possible on a rimmed quarter sheet pan. Drizzle each slice with olive oil and sprinkle lightly with salt.
Bake the bread slices for 5 to 7 minutes, or until they are crisp and lightly golden around the edges. Remove from the oven and allow them to cool for about 10 minutes before assembling.
Once cooled, spread a generous layer—about 1 tablespoon—of goat cheese on each crostini, ensuring most of the surface is covered for a rich base.
Top the cheese with fresh fig quarters, gently pressing them into the cheese to help them stay in place.
Finish each crostini with a scattering of toasted pistachios, then lightly season with sea salt and freshly ground black pepper. Just before serving, drizzle with either balsamic vinegar or honey—or a bit of both for a sweet and tangy contrast.
Serve immediately while the crostini are crisp and the flavors vibrant.
