Ingredients

  • 3 lbs potatoes peeled and cubed
  • 4 cloves garlic minced
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  • Start by placing the peeled and cubed potatoes into your crockpot. Pour enough water over the potatoes to fully submerge them. Cover and cook on high for 3 to 4 hours, or until the potatoes are soft and tender when pierced with a fork.
  • Once the potatoes are fully cooked, drain off the water and return them to the crockpot. Add the unsalted butter and heavy cream, allowing the warmth of the potatoes to help melt the butter. Sprinkle in the minced garlic, along with salt and pepper to season according to your taste.
  • Using a potato masher, blend the ingredients together until the mixture becomes smooth and creamy. If you prefer a chunkier texture, mash slightly less. Keep the mashed potatoes warm in the crockpot until you're ready to serve.
  • For the finishing touch, garnish the mashed potatoes with freshly chopped chives to add a pop of color and a hint of herbal freshness. Serve as a comforting side dish that pairs beautifully with your favorite mains.
