Instructions

Prepare the Kanikama Filling

  • Begin by preparing the sushi rice and setting aside two cups of cooked rice.
  • Take the kanikama sticks and cut them into very small pieces, approximately 3 millimeters in size. Place the pieces in a small bowl. Although kanikama is sold in stick form, you can also pull the pieces apart into fine strips for a more delicate filling.
  • Add the Kewpie Japanese mayonnaise to the bowl. Mix the ingredients thoroughly, using enough pressure to break apart the crab sticks and create a cohesive, slightly creamy crab mixture. Set aside while preparing the remaining ingredients.

Prepare the Avocado, Cucumber, and Nori

  • Cut the avocado in half and remove the pit. Carefully scoop each half away from the peel using a spoon, then slice the avocado into thin, even pieces.
  • Next, julienne the Persian cucumber into slender strips. Keeping the vegetables relatively uniform in size will make them easier to arrange inside the roll and will help create a balanced texture in every bite.
  • Using scissors or a sharp knife, cut each nori sheet in half across the shorter side. This creates smaller sheets that are ideal for making California rolls.

Layer the Rice and Sesame Seeds

  • Place a bamboo rolling mat on a clean, flat work surface. Position one half-sheet of nori on the mat.
  • Measure approximately ½ cup of prepared sushi rice and spread it evenly across the nori. Dipping your fingers into a bowl of water before handling the rice will help prevent the grains from sticking to your hands. Spread the rice gently and evenly, taking care not to press too firmly and compact the grains.
  • Once the rice has been distributed, sprinkle the white sesame seeds evenly over the surface. The sesame seeds add a subtle nuttiness and a pleasant textural contrast to the soft rice and creamy filling.

Add the Filling

  • Carefully turn the nori and rice over so that the rice is facing downward against the bamboo mat. Place the kanikama and Kewpie mayonnaise mixture horizontally across the center of the exposed nori.
  • Approximately three tablespoons of the crab mixture will give you a generously filled roll with a substantial diameter. Arrange the thin avocado slices and julienned cucumber horizontally alongside the kanikama mixture, keeping the filling compact and evenly distributed.

Roll the California Roll

  • Place the bottom edge of the bamboo mat over the filling and begin lifting the nori toward the opposite side. Use a steady upward motion to wrap the nori completely around the filling.
  • As you roll, apply gentle and even pressure to keep the cylinder compact and secure. Avoid pressing too forcefully, as this can cause the nori to split or force the rice and filling out through the sides. Continue rolling until the sushi roll is completely enclosed and naturally releases from the mat.
  • If the roll feels loose or difficult to tighten, wrap it in a sheet of cling wrap. Use your index fingers and thumbs to gently pinch and tighten the sides of the wrapped roll while simultaneously rolling it forward. The movement should resemble the way you would twist and tighten the ends of a candy wrapper.

Slice the California Roll

  • Once the roll is firmly shaped, remove the cling wrap if used. Use a very sharp knife to cut the roll into individual pieces.
  • Make each cut using one long, smooth stroke rather than moving the knife back and forth. A sawing motion can crush the rice or tear the nori, resulting in untidy slices. For the cleanest cuts, wipe the blade with a damp cloth after each slice to remove any rice that may have accumulated.
  • Arrange the California roll pieces on a serving plate and enjoy with soy sauce, wasabi, and gari pickled ginger on the side.
