Ingredients

  • 1 cup all-purpose flour
  • 3 ripe medium-sized bananas
  • 3 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • Oil for frying

Instructions

  • In a mixing bowl, use a fork to mash the ripe bananas until smooth with a few small lumps remaining for texture. Sprinkle in the brown sugar, followed by the vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir well to ensure the spices and sugar are evenly distributed.
  • Gradually sift in the all-purpose flour, gently folding it into the banana mixture with a spoon until a thick, cohesive batter forms. Avoid overmixing to maintain a light texture.
  • Pour enough oil into a 10-inch skillet to create a shallow frying layer and place it over medium-high heat. Once the oil reaches the ideal temperature (a small drop of batter should sizzle upon contact), carefully drop spoonfuls of the banana batter into the hot oil. Fry until the edges turn golden brown and bubbles form on the surface. Flip each fritter and continue frying until the second side achieves an even golden hue.
  • Once cooked through, transfer the fritters to a plate lined with paper towels to drain excess oil. Serve warm for the best taste and texture.

Notes

  • The riper the bananas, the sweeter the fritters—adjust the sugar to suit your taste.
  • These fritters have a thin, moist texture rather than a fluffy, bread-like consistency.
  • When using a cast iron skillet, lower the heat to medium to prevent over-browning.
