- Mix the flour, salt, black pepper, and Italian seasoning on a large plate, ensuring they are well combined. 
- In a small bowl, whisk the eggs thoroughly until the yolks and whites are fully blended. 
- In another medium-sized bowl, blend the bread crumbs with the grated parmesan cheese, creating an even coating mixture. 
- Slice the zucchini into fries, approximately 3 inches in length. Dredge each piece first in the seasoned flour mixture, then dip into the whisked eggs, and finally coat with the parmesan and bread crumb mixture. 
- Lightly spray the air fryer basket with cooking oil. Arrange the zucchini fries in a single, even layer in the basket. Apply another light coat of spray oil over the fries.
