Ingredients

  • 1 small yellow squash sliced
  • 1 small zucchini sliced
  • 6 ounces mushrooms sliced
  • 1 red bell pepper chopped
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon Italian seasoning

Instructions

  • In a medium bowl, combine the yellow squash, zucchini, mushrooms, bell pepper, and broccoli florets.
  • Drizzle the olive oil over the vegetables and sprinkle with Italian seasoning and parmesan cheese. Gently toss everything together to ensure an even coating.
  • Arrange the seasoned vegetables in the air fryer basket in a single layer. Set the temperature to 390°F and cook for 5 minutes.
